Pavlova

  1. Preheat oven to 150°C
  2. Beat 3 egg whites until very stiff.
  3. Add 3 tablespoons of cold water
  4. Add 1 cup caster sugar very slowely while beating
  5. Slow beater and add 1 teaspoon vinegar, 1 teaspoon vanilla essence, 3 teaspoons cornflour.
  6. Draw a 22cm circle on baking paper
  7. Spread the stuff out to within 2cm of the border, make it nice and flat
  8. Bake for 45 mins, then let cool in oven.
  9. Can be kept in cool airtight place for a few days before creamed.
