Truly simple to make and yet oh so tasty!!
- 1 Cup frozen berries
(partially thawed)
- 2 Sheet puff pastry
(partially thawed)
- 1/2 Cup cream
- 2 Tablespoon icing sugar
- 1/2 Teaspoon vanilla essence
- 1/2 Cup mascarpone
- Preheat oven to 220, start thawing frozen berries
- Cut puff pastry into quarters, prick with fork, bake until golden (~mins)
- whip cream, icing sugar, vanilla essence together and fold in mascarpone
- assemble onto plate - pastry then cream then berries then second pastry. Dust with icing sugar
I use 1 sheet of puff pastry to make 2, then use the left over cream mix the next night
