Indian Burgers
- 1 KiloGram kumara
- 400 Gram cannellini beans
- 1 onion
- 2 Teaspoon minced garlic
- 1 Tablespoon minced ginger
- 2-3 Tablespoon red curry paste
- 1/4 Cup coriander
- 1 Teaspoon cumin seeds
- 1 Cup natural yoghurt
- 1 Teaspoon minced red chilli
- 2 Tablespoon fresh mint leaves
- 1/2 Cup cucumber
- peal & chop kumara into large chunks - boil until tender
- Peel and chop onion. cook onion, garlic, & ginger in a dash of oil until tender not brown
- stir in curry paste and cook for 1-2 more mins
- mash kumara and beans together
- add onion mixture and season with salt and pepper
- stir in fresh chopped coriander
- wet hands and shape mixture into 8-10 patties, frying gently for 2-3 minutes each side.
- Serve burgers with yoghurt and cucumber raita, salad, naan bread, and mango chutney.
