Tomato Feta Salad
One of my all time favourite salads. After you've made it once, you'll find your own preference to how much of each ingredient you prefer, or swap some of the ingredients out/in.
- 6 cherry tomatoe
(halved)
- 340 Gram feta
(cubed)
- 1 red onion
(small, chopped)
- 3 Tablespoon white wine vinegar
- 1/4 Cup olive oil
- 1 Teaspoon salt
- 1/2 Teaspoon black pepper
(fresh ground)
- 2 Tablespoon basil
(chopped fresh)
- 2 Tablespoon parsley
(chopped fresh)
- Add the feta to the tomatoes and then add the onion, vinegar, olive oil, salt, pepper, basil, and parsley. Toss carefully and salt, to taste, depending on the saltiness of the feta. Serve chilled or at room temperature.
As we didn't have white wine vinegar I used White Balsamic vinegar instead - tastes great!
Used this as a base to make a quick, easy version of a Panzanella by adding ripped up crusty french stick.
