Bakewell Tart

Super easy to make, get the kids involved.
We find the cake a little on the dry side, but is awesome with custard, cream, yoghurt or ice cream.
- 140 Gram ground almond
- 140 Gram butter
(softened)
- 140 Gram caster sugar
- 140 Gram self raising flour
- 2 egg
- 1 Teaspoon vanilla essence
- 250 Gram raspberries
(or other fruit, even canned)
- 2 Tablespoon flaked almond
- icing sugar
(to serve)
- Pre heat oven to 180 degrees celsius. Grease a 20 cm springform cake tin.
- In food processor put in ground almonds, butter, sugar, flour eggs and vanilla extract. Mix till well combined
- Spread half the mixture into cake tin, smooth down. Over top scatter fruit. . Then dollop remaining cake mix over top, roiughly spreading, you may need to use your fingers. Scatter with flakked almonds. Bake 50 minutes until golden.
- Cool, remove from tin and serve with a dusting of icing sugar.
