Rice and Beans
Goes great with mexican style food!
Quick and simple tto.
- 1 Can mixed beans
(drained and rinsed)
- 1/2 Teaspoon cumin seeds
- 1 fresh chilli
(optional)
- 1 Packet brown microwave/cooked rice
- 1 lemon
- 1 Tablespoon olive oil
- Large pan, medium heat. Add oil.
- Drain and rinse the beans, then put into the large pan with 1 tablespoon of oil, the cumin seeds and the whole fresh chilli • Toss regularly for a couple of minutes until the beans are crispy-skinned
- Stir the rice and the juice of 1 lemon into the beans to warm through then serve.
