Lemon Icing

• 2 Cup icing sugar
• 1 Teaspoon butter  (softened)
• 2 Tablespoon lemon juice  (approx)
• 1 Teaspoon lemon rind
• 1 Drop yellow food colouring

1. Sift icing sugar into a bowl. Add butter. Add sufficient lemon juice to mix to a spreadable consistency. Flavour with lemon rind.
2. Add a few drops of yellow food colouring if you wish.
