Cous Cous
- 1/2 Cup stock
(chicken or veg)
- 1-2 Tablespoon oil
- 1/2 Cup cous cous
- 1 Teaspoon butter
- Put stock in small saucepan, adding oil. Bring to boil. Remove from heat.
- Stir in cous cous. Cover and stand for 2-3 minutes.
- Add butter and heat on very low heat while stirring with a fork.
I like to add Moroccan seasoning to spice up cous cous, either add with butter or sprinkle on top.
Goes great with grilled veg on top (eg courgette, red onion, eggplant, capsicum).
Also good for adding steamed veg on top, eg beans and carrots
For a cold salad: toss through corn, capsicum, chives and salad dressing.
