Baked Fish with warm Nicoise dressing

- 750 Gram new potatoes
- 300 Gram green beans
(trimmed)
- 60 Mililitre balsamic vinegar
- 30 Mililitre olive oil
- 2 Tablespoon pitted green olive
(finely chopped)
- 2 Teaspoon baby caper
(rinsed and drained)
- 1 red chilli
(finely chopped)
- 1 1/2 Tablespoon flat leaf parsley
(finely chopped)
- 1 Tablespoon water
- 4 fish fillets
- Cook potatoes in a large saucepan of boiling water until tender approx 10 minutes, adding the beans for the last 1-2 minutes of cooking time. Drain vegetable and halve potatoes.
- Cook fish.
- Dressing: PLace a small fry pan over medium-low heat. Add balsamic vinegar, olive oil olives, capers and chilli to pan with 1 tablespoon of water. Heat for 1 minutes or until dressing is warmed through. Stir through parsley.
- Drizzle warm Nicoise dressing over fish and serve with potatoes and beans.
