Pasta with Olives, Tomatoes, Garlic & Rosemary
- olive oil
- 2 garlic clove
- 1 chilli
- 3 Handful cherry tomatoes
- 1 Handful kalamata olives
- salt
- pepper
- 3 Handful rocket
- De-seed and roughly chop tomatoes, squash and de-stone olives, finely chop garlic, roughly chop cos lettuce, and finely chop chili.
- Pasta Sauce: \r\nAdd a couple of good lugs of olive oil to large frying pan.
- Fry garlic & chili for 30 seconds, add tomatoes & olives, cook 4 - 6 minutes.
- Combining sauce & pasta: \r\nAdd cooked pasta to frying pan, add chopped cos lettuce, stir through and serve with salt & pepper to taste.
- Serving Suggestions: \r\nGreen salad & bread or\r\nCrumbed chicken & garlic bread
Cos lettuce can be used instead of rocket lettuce
