Eggplant Gratin

- 1 egg plant
(sliced 5mm)
- 300 Gram mozzarella cheese
(grated)
- 85 Gram parmesan cheese
(grated)
- 1 Cup pasta sauce
- olive oil
- salt
- black pepper
- Pre-heat oven to 200 degrees celsius, and turn on grill if using separate grilling device. Grate cheeses.
- Slice eggplant into 5mm slices, spray with oil and grill or bake till cooked and tender. (I grill in George Foreman grill for approx 5-8 mins).
- Spread a little olive oil in bottom of gratin dish. Add layer of eggplant slices, pasta sauce (just cover eggplant) and some of the grated mozzarella (approx 1/4).
- Continue layering until all ingredients used, ending with a layer of sauce. Sprinkle parmesan cheese over the top. Bake in oven 30 minutes or until bubbling.
Serve with plenty of french bread.
