Couscous, Orange & Chickpea Salad
- 1 1/2 Cup cous cous
- 1 Cup chickpeas
- 10 Gram vegetable stock
- 1/4 Cup currant
- 2 orange
- 1/2 Cup spring onion
- 1/2 Cup natural yoghurt
- 1/3 Cup lemon juice
- 2 garlic clove
- 1 Teaspoon ground cumin
- boil 1.5 cups water and vege stock
- add couscous, cover, and turn off element - remove once cooked (few mins)
- allow couscous to cool, then mix in other ingredients
- to make dressing, wisk, chill, serve
