Pikelets
- 1 Cup plain flour
- 1 Teaspoon baking powder
- 1/4 Teaspoon salt
- 1 egg
- 1/4 Cup sugar
- 3/4 Cup milk
- In a bowl, beat egg and sugar together until thick and pale. Sift flour with baking powder and salt.
- Add sifted dry ingredients in two batches, alternating with milk, adding just enough milk to form a smooth, thick batter
- Heat a nonstick frying pan over a medium heat. Add a film of oil and cook tablespoons of batter in batches, for about 2 minutes or until bubbles appear on the surface of each pikelet. Turn pikelets over to lightly brown the other side. Remove to paper towels and wrap loosely to keep warm.
