Roasted Rhubarb Salad

- 2 cups rhubarb
(1cm chunks)
- 2 Tablespoon sugar
- 2 Tablespoon balsamic vinegar
- 1 Tablespoon olive oil
- 1 Tablespoon shallot
(minced)
- 1/4 Teaspoon salt
- 1/4 Teaspoon black pepper
- mixed baby greens
- 1/2 Cup feta
(crumbled)
- 1/4 cup walnuts
(chopped and toasted)
- 1/4 cup saltanas
- toss rhubarb in sugar and leave for 10 mins, stiring a couple of times
- spread out on tinfoil and bake at 230C for 5 mins
- combine balsamic vinegar, olive oil, shallot, salt and black pepper. Mix through mixed baby greens
- Top with feta, walnuts, saltanas and rhubarb mix
