Potato Salad
- 3-4 potato
(large)
- potato salad dressing
- spring onion or chives
(thinly sliced)
- 2 hard boiled egg
(quartered)
- 2-3 rashers cooked bacon
(chopped)
- 1 red or green capsicum
(sliced)
- Peel and chop potato into large chunks, put in pot and just cover with water, bring to the boil and cook till tender.
- Remove, drain and allow potatoes to cool.
- Stir through enough potato salad dressing to coat as desired.
- To add extra flavour, add some or all of the remaining ingredients.
