Breakfast Beans

Slightly altered from the stuff.co.nz recipe. Their original recipe served this with a baked potato instead of grainy toast.
- 1 onion
(finely diced)
- ¼ Teaspoon smoked paprika
- ½ Teaspoon ground cumin
- ¼ Teaspoon cayenne pepper
- Can baked beans
- Can diced tomatoes
(I like Moroccan flavoured ones)
- eggs
(however many you want to eat 2-4)
- cooking oil
- In a frying pan on medium heat, add a splash of oil and sauté onion for a couple of minutes. Add spices and mix around the pan for one minute. Add tomatoes and beans and mix through.
- Simmer for about 10 minutes or until the sauce has thickened up. Crack egg in the middle and place a lid on the pan until eggs are cooked to your liking.
- Serve on thick grainy toast, season with salt and pepper. I also like to add Worcestershire sauce :)
Left over tomato and bean mix makes great quesadillas. Spread cream cheese on one side of two wraps and avocado one side of one. Heat heavy bottom pan and add a light spray of oil. Place avocado wrap plain side down, top with beans/tomato mix and top with other wrap, cream cheese side down. Turn once brown and crispy. Serve with a salad to make a real meal out of it.
