Super Bran Breakfast Loaf

High fibre loaf that can be eaten on the go.
- 1 Cup dried pitted date
(chopped)
- 1/2 Cup cold water
- 1 Teaspoon baking soda
- 50 Gram butter
(softened)
- 1 Cup brown sugar
- 1 Teaspoon vanilla essence
- 1 egg
(beaten)
- 2 banana
(ripe and mashed)
- 1 Cup carrot
(grated, loosely packed)
- 1 Cup walnut
(chopped - or other nuts)
- 1 1/2 Cup wholemeal flour
- 1/2 Cup bran flakes
- 1 Teaspoon baking powder
- 1/2 Teaspoon mixed spice
- Heat oven to 180 degrees. Place dates and water in a small saucepan and boil for about 5 mins, stirring frequently to mash up the dates. Add baking soda and mix well - it will froth up.
- Beat butter, with sugar and vanilla until thick, light and creamy.Then beat in egg. Mix in banana, carrot, nuts and dates.
- Stir flour, bran, baking powder and mixed spice together. Add to wet mixture and fold together with a large metal spoon until well combined - but do not over-mix.
- Spoon batter into greased loaf tin and smooth out the top a little. Bake for 45 mins or until loaf springs back when lightly touched. Leave in tin for 10 mins before turning out.
- Freezes well.
