Slow Roasted Tomatoes

- tomato
- olive oil
- salt
- pepper
- balsamic vinegar
- garlic clove
- Cut toms in half, place cut side up in roasting dish. Sprinkle with a bit of salt and pepper if desired, drizzle with a little oil and a little balsamic, add some whole garlic cloves if desired.
- Roast on low (like, 150 deg C or even cooler if you like) for a good couple of hours.
- While hot bottle into sterilised jars, 'juice' and all, then top with hot oil to within a cm of the top, and seal.
