Blueberry & Yoghurt Muffins
- 1/2 Cup yoghurt
- 3/4 Cup milk
- 3/4 Cup sugar
- 1/4 Cup brown sugar
- 4 Tablespoon butter
- 2 Teaspoon lemon rind
- 2 egg
- 2 Cup plain flour
- 21/2 Teaspoon baking powder
- 1 Teaspoon baking soda
- 1/4 Teaspoon salt
- 1 Cup blueberries
- Preheat oven to 180 degrees celsius. Grease 12 capacity muffin tray.
- Combine yoghurt, milk, sugars, butter, eggs and lemon rind in bowl.
- Sift flour, baking soda, baking powder and salt on top. Mix gently until only just combined.
- Add blueberries and fold in gently.
- Spoon into muffin cups. Bake for 20-25 minutes.
- For that special touch: cut tops off muffins and spread lemon honey on base along with a dollop of yoghurt. Place lid back on and lightly sieve icing sugar on top.
Fresh blueberries are supposed to be used. I used frozen ones, will let you know how it goes.
