Mustard Seed Raita

- 1 Tablespoon oil
- 1 Teaspoon yellow mustard seed
- 250ml natural yoghurt
- 1 cucumber
- 3 Tablespoon mint
- Peel and deseed cucumber, grate and then squeeze excess water out of cucumber. Chop mint leaves. Add both to yoghurt.
- Het small fry pan on medium heat. Add oil, when hot add mustard seeds, fry until they pop. Drains seeds from oil and add seeds to yoghurt mixture.
To make a cumin raita, uses toasted cumin seeds instead of mustard seeds.
