Courgette alla Carbonara
- 200 Gram penne pasta
- bacon
- 4 small courgette
- 2 Tablespoon thyme
- 2 egg yolk
- 50 Mililitre cream
- 2 Handful parmesan cheese
- Pinch pepper
- cook 200g penne pasta
- Fry chopped bacon in pan with olive oil
- Cut courgettes into four length-wise, then cut middle out of each as per diagram
- add bacon, a big pinch of pepper, thyme
- To make pasta sauce, mix all ingredients together
- Drain pasta, add to pan, mix, then remove from heat and let it cool slightly
- Stir in sauce & a couple of splashes of pasta water
- To serve, top with more thyme and drizzle with olive oil
If you are good, this can all be done at the same time.
