Kebabs with Couscous
- 1 lemon
- 2 garlic clove
(crushed)
- 2 Tablespoon olive oil
- 1 Tablespoon coriander
- 3/5 Cup natural yoghurt
- 1 Tablespoon lemon juice
- 1 Tablespoon lemon rind
- sea salt
- black pepper
- chicken breast
(chopped)
- capsicum
(chopped)
- Combine lemon juice, crushed garlic clove, olive oil and coriander in a non metallic bowl, add chopped chicken breast and capsicum
- Marinade for at least 1 hour (pref. overnight)
- Preheat the grill and soak skewers in water for 10 minutes. thread chicken and capsicum onto the skewers.
- Grill kebabs for around 10-12 minutes, turning occasionally until the chicken is slightly charred, cooked through and tender.
- to make the yoghurt sauce, combine natural yoghurt, lemon juice and lemon rind. season with sea salt and black pepper
- Serve on Couscous, drizzle with the yoghurt sauce
