Quick, Creamy Salmon Orzo

This is a 2 person recipe as some of my household can't stand the smell of fish!
It is quick, easy and delicious.
If you want, you can add baby spinach at the end step.
- 20 Gram Butter
- 1/4 onion
(Finely diced)
- 1 cloves Garlic
(Finely diced )
- 1/2 Tablespoon flour
- 1 Cup Milk
- 1 C Chicken stock
- 3/4 Cup Orzo
- 1 Cup Frozen peas
- 1/4 Cup parmesan cheese
(Finely grated)
- 95 G Tinned salmon
- herbs
(Finely chiffonade. I used parsley, basil, chives & sage)
- Prep all ingredients. Heat fry pan over medium high heat. I did use a little olive oil.
- Melt butter. Add onion fry for a little then add garlic. Fry until translucent.
- Add flour. Fry about 1 minute until frothy.
- Add half the milk. Ideally whisk, but I just stirred until roux was well combined.
- Add remaining milk, chicken stock, orzo & frozen peas and a splash of water. Bring to the simmer, stirring. Then simmer 5-7 minutes until Orzo cooked. It will probably be a little wetter that you expect, that's OK.
- Remove from heat. Stir through parmesan and salmon. Salt & pepper to taste.
- Serve with a selection of chiffonade herbs.
