Pad Thai

Uncomplicated version of Thai style fried noodles. Still missing something, but pretty close to what I'm after. Tastes nice and fresh. The original recipe had prawns and tofu instead of chicken and prawn powder with the garnish.
- 1 Packet flat noodles
- 1 chicken breast
(sliced thinly)
- 4-6 garlic clove
(smashed and chopped)
- 3 Tablespoon peanut oil
- 3 Tablespoon sugar
- 1 Teaspoon fish sauce
- 125 Gram bean sprouts
- 2 egg
- 2 Tablespoon roasted peanuts
- 2 spring onion
(finely chopped)
- handful fresh coriander
(finely chopped)
- 1 lime
(cut into wedges)
- Heat peanut oil in pan and fry garlic clove
- add chicken breast and fry until almost cooked/brown
- sprinkle over sugar, fish sauce, mix and fry for a minute
- move everything to the side. crack the eggs, wait a bit for them to start to set then mix around and fry for a couple of minutes
- add the flat noodles, mix and fry for a couple of minutes
- add bean sprouts fry for a minute until just cooked
- serve with peanuts, spring onion, coriander for garnish and lime on the side
