Bean & Avocado Quesadillas

- 8 Tortilla
- 1/4 Cup cream cheese
(Spreadable)
- 1 Can Chilli beans
- 200 Gram Guacamole
- 1 capsicum
(Chargrilled, cut into strips)
- 4 Cup Baby rocket
- Spread each tortilla with cream cheese. Set 4aside. Top each of the other four tortillas with a quarter of the beans and guacamole and season with salt and pepper. Add chilli seasoning/sauce if hotter quesadillas required.
- Place remaining tortillas, cheese side down, over beans and avocado to make four quesadillas. Press each quesadilla down firmly.
- Preheat large fry pan (or sandwich press). Cook each quesadillas for approx 2 mins each side (or total if in sandwich press) until golden. Transfer to heat proof board and cut in quarters and divide among serving plates.
- Serve topped with capsicum and rocket.
