Tuscan Sausage & Bean Casserole

- 8 sausage
- 1 Tablespoon olive oil
- 1 onion
(chopped)
- 2 garlic clove
(chopped)
- 1 green capsicum
(deseeded and sliced)
- 1 canned tomatoes
- 2 Tablespoon Tomato paste
- 1 Can cannellini beans
(rinsed)
- Prick sausages and brown either by grilling for 10-12 mins or frying. Set aside
- Heat oil in large fry pan. Add onion, garlic and capsicum and cook for 5 minutes, stirring occasionally.
- Add tomatoes anmd simmer for 5 minutes, stirring occasionally.
- Stir in tomato paste, cannellini beans and sausages. Cook for 5 minutes. or until piping hot. Add 4-5 tablespoons of water if too dry.
- Serve with mashed potato.
- NB: I made a few changes...
*You're supposed to use Italian spiced sausages which I didn't have so used Italian flavoured canned tomatoes with some extra herbs with beef sausages.
*The original recipe says grill the sausages but I couldn't be bothered making extra dishes so browned in fry pan and kept them in there when I added the onion, garlic and capsicum.
*I also added some red wine to add a bit more flavour since my sausages were plain beef.
*I also added baby green beans (which added the green colour to my dish as I only had yellow capsicum not green).
