Kumara & Blue Cheese Pasta

- 3 red kumara
(medium sized, peel & diced)
- 30 Gram butter
- 1 onion
(peeled, finely diced)
- 1 Teaspoon garlic
(crushed)
- 1 Teaspoon ginger
(minced)
- 3-6 Slice parma ham
(3 slices finely sliced)
- 300 Mililitre cream
- 100 Gram blue cheese
- 300-400 Gram fettucine
(or tagliatelle)
- salt
(to taste)
- black pepper
(to taste)
- Simmer kumara in pan of boiling water for 5-8 minutes until just tender, drain.
- Heat butter in large fry pan and saute onion, garlic and ginger for 4-5 minutes until soft but not coloured. Add ham and cook for a further minute.
- Add kumara and cream, then add in crumbled blue cheese. Simmer for 2-3 minutes until bubbling.
- Cook pasta according to packet directions until al dente, drain.
- Add the hot cooked pasta to the creamy kumara sauce and heat through, stirring to combine.
- Season to taste and garnish with extra ham if desired.
- Parma ham garnishing: Pre heat oven to 180 degrees Celcius. Lie the pieces of ham flat on a baking tray and cook for 2-3 minutes until they are crisp. Break the pieces into shards and sprinkle over the pasta before serving.
