Cheese & Courgette Mini Muffins

- 100 Gram plain flour
- 50 Gram cheese
(parmesan or cheddar - grated)
- 1 Teaspoon baking powder
- salt
- black pepper
- 1 courgette
(small, grated)
- 1 egg
(medium)
- 1 Tablespoon olive oil
- 75 Mililitre milk
- Preheat oven to 180 C/350 F degrees.
- In a large bowl sift flour, baking powder, grated cheese, salt and pepper.
- In another bowl whisk egg. Then add zucchini, milk and olive oil. Add to dry ingredients and mix all ingredients well.
- Spoon mixture into greased muffin holes and bake in a preheated oven for 20-25 minutes.
- Makes 12 mini muffins.
