- lay fish into portions in a baking dish
- sprinkle with lemon zest, salt and pepper
- add a couple of cubes of butter per portion and then layer with slices of tomato
- sprinkle with dill and drizzle with white wine
- add a few more cubes of butter around and fan bake for 12 mins at 180
