Bretzen
- 1 Teaspoon yeast
- 1 Tablespoon sugar
- 1 Teaspoon salt
- 2 Tablespoon butter
- 250 Mililitre warm water
- 700 Mililitre plain flour
- rock salt
- 5 Teaspoon baking soda
- 1 Litre water
- Mix sugar, salt, butter, 250ml water and flaur together in a bowl and knead till smooth
- Cover the dough and rise in a warm place for about 1 hour
- Form Brezen (see picture) and rise for another 15 minutes
- Boil 1 litre water in a saucepan (not aluminium), add baking soda and boil for another minute
- Use a metal skimmer to put the brezen facing down into the hot water
- Leave them for about 30 seconds or wait until they come to the top.
- Lay Brezen on a tray with baking paper and sprinkle rock salt over them.
- Bake at 200°C in a preheated oven for about 12 to 15 minutes till they are brown.
- You should eat or freeze them the same day - if you want to freeze the Brezen just bake them till they start to become brown.
