Choc Apricot Muffins
- 1/2 Cup dried apricots
- 1/2 Cup chocolate chips
- 1 Cup bran flakes
- 1/3 Cup castor sugar
- 1/4 Cup olive oil
- 1 egg
- 1/4 Cup milk
- 4 banana
- 1 1/2 Cup self raising flour
- pecan nuts
- Combine bran, sugar, oil, egg and milk in a bowl. Stand for 5 minutes to soften
- Fold in banana's, flour, apricots and chocolate until just combined.
- Spoon mixture into well greased muffin pan
- Decorate each muffin with pecans and bake for 25-30 minutes at 180°C
These are awesome
I prefer to cut the dried apricots into 1/2s or 1/3s
